Exams

The exam can be administered through a computer
or it can be completed on a paper copy. Our computers are
limited, therefore, you have to take the paper exam. Students
can also bring their own laptops to use.

Italian Cooking

This hands-on, skills-based series covers all the basic skills you
will need to feel comfortable preparing several classic Italian
dishes. We will focus on each cooking technique, using multiple
ingredients to drive it home, so you will leave confident to cook
up most any food in your own home kitchen. You will receive
a complete recipe packet and enjoy a full sit-down meal at
the end of class with your classmates. Our classes are hands-on,
with demonstration-style teaching. Everyone is assigned
a specific task to complete during the sessions and asked to
prep certain aspects of the ingredients at their assigned work
station, observing proper food handling techniques. We work
together as a group, with the chef at the head of the table. We
focus on knife skills and strive to find every opportunity to offer
you a hands-on experience at the stove and at your stations, all
within the parameters of a commercial style kitchen. Students
are asked to assist in all cooking and to break-down/clean up at
the end of class.

ServSafe®

Our ServSafe® courses are committed to providing the
most professional and comprehensive training. If you are
an employee seeking your Food Handler Card or Manager
ServSafe® Certification or a business seeking a consistent
education solution for your employees, the National
Restaurant Association’s ServSafe® Food Handler and
Manager Certification can be beneficial to a successful
restaurant career. Additionally, the ServSafe® Manager
Certification helps to substantiate that a manager has
ample food safety knowledge to safeguard the public from
foodborne illness.
What to Expect:
Our courses are designed to prepare students for the
ServSafe® Food Handler and Manager exam. These courses
will assist students with the following:
• Increase safe food handling practices
• Understanding of HACCP principles
• Personal Hygiene
• Maintain a sanitary facility
• Understanding the regulations and the inspection process
Our Certified ServSafe® Proctors will teach you the basics
that you need to sit for the exam. Each course is taught for 10
sessions with four hours of instruction in Food Handling and/
or four hours of instructor in Manager fundamentals.
